This easy Soft Snickerdoodle Recipe makes Jumbo cookies, just like Crumbl! These jumbo bakery-style snickerdoodles are thick with the most amazing tender texture and coated with the perfect amount of cinnamon sugar that gives them slightly crisp edges.

Crumbl Snickerdoodles are big, soft, chewy, and thick, with a light vanilla flavor and an outside coating of cinnamon sugar. This Soft Snickerdoodles recipe is a really perfect match for both the flavor and texture of the bakery version and so easy to make at home.

I am a big fan of the amazing giant cookies from Crumbl, so of course, I’m working my way through creating Crumbl cookies copycat recipes for some of my favorites!

  • All-Purpose Flour: This basic pantry ingredient is the building block of most cookie recipes. No need to use fancy flours for this recipe.
  • Cream of Tartar: This is responsible for the classic tang that snickerdoodles have, and it also helps with leavening.
  • Baking Soda: Works with the eggs and cream of tartar to add airiness to these soft cookies.
  • Salt: A bit of salt in sweet recipes helps to elevate the simple flavors and balance the sweetness.
  • Unsalted Butter: Be sure to use unsalted butter, as salted butter will have too much salt for the recipe. Let the butter come to room temperature before mixing.

  1. Mix Dry Ingredients: Use a spoon or a whisk to fully combine the flour with baking soda, cream of tartar, and sea salt.
  2. Cream Butter and Sugar: Add softened butter and granulated sugar to your mixer bowl fitted with the paddle attachment. Cream together for about 3 minutes, or until light and fluffy.
  3. Add Eggs and Vanilla: Add one egg at a time, mixing well between each. Then mix in the vanilla extract.
  4. Add Flour in Batches: To avoid making a mess, mix the flour mixture into the butter mixture in three batches, stirring well between each addition.

  1. Make the Coating: Stir sugar and flour together in a medium bowl.
  2. Make 12 Balls: Separate the dough into 12 equal-sized portions. They’ll seem large, but we are making jumbo cookies! Roll each dough ball into the cinnamon sugar, making sure to fully coat it. Add the balls to the cookie sheets, leaving six inches between them.
  3. Flatten: Use your fingers to gently press each ball into a thick, large flat circle.
  4. Bake: Bake snickerdoodles in the preheated oven for 14-15 minutes, or until they are lightly golden brown on the edges, puffed up, and the centers are no longer shiny or wet-looking. Remove from the oven and let cool completely on the cookie sheets before transferring to wire racks.

Top Tips for Baking Snickerdoodle Cookies

  • Use Fresh Ingredients. Leavening ingredients can expire and lose their power, which can then cause the snickerdoodles to turn out flat rather than thick and chewy. When possible, buy fresh cream of tartar and baking soda before baking snickerdoodles.
  • You Should Not Need to Chill This Dough. Many classic snickerdoodle recipes call for chilling, but we didn’t find it necessary when making these giant cookies.
  • Share! Crumbl sized cookies can easily be cut in half or quarters to share if you don’t want to eat the whole thing by yourself. These large cookies also make wonderful gifts, or high-ticket offerings at bake sales.

  • Pyrex Mixing Bowls: There’s something about these clear glass mixing bowls that brings me back to baking with my mother. They are a must for me, even though I’ve tried other bowls, I still come back to these every time.
  • Hand Mixer: No need to use a fancy stand mixer for a batch of cookies when a hand mixer does the job just fine. I use this one from Kitchenaid.
  • Measuring Cups and Spoons: This set from OXO is just so well designed! There are magnets in the handles so they stack and stick to each other perfectly.
  • Kitchen Scales: for measuring ingredients or portions by weight, this glass kitchen scale is my favorite.
  • Cookie Scoop: This scoop is a small size, and makes one tablespoon sized scoops, perfect for most drop cookie recipes. I suggest keeping a medium cookie scoop on hand as well.
  • Cookie Sheet: I love my Nordic Ware half sheet pans. They are very high quality and last forever.
  • Silpat: To line the cookie sheets, a Silpat silicone mat in half size is perfect for making everything non-stick, and you’ll never need to buy parchment paper again.

These cookies will stay soft for up to 5 days if they are stored in an airtight container at room temperature.

Cream of tartar gives snickerdoodles their classic tangy flavor, and also helps to make them soft and fluffy. You shouldn’t try to make snickerdoodles without it.

Why are my snickerdoodles dry?

Dry snickerdoodles are almost always a result of overbaking. Be sure to remove the cookies from the oven as soon as they start to brown on the bottom. They will continue to cook a bit as they cool.

Why are my snickerdoodles flat?

This easy Soft Snickerdoodle Recipe makes extra large, thick cookies, with a cinnamon sugar coating. They are amazing, and just like Crumbl!

Ingredients

  • 4 ½ cups (639g) all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 1 ½ cups (3 sticks/340g) unsalted butter softened
  • 1 ½ cups (340g) granulated sugar
  • 3 large eggs at room temperature
  • 1 tablespoon vanilla extract

For the coating:

  • ½ cup (115g) granulated sugar
  • 2 ½ tablespoons ground cinnamon

Instructions

  • Preheat the oven to 350°F/180°C. Line 2 sheet trays with parchment paper or a silicone baking mat, and set aside.

  • In a large bowl, stir together the flour, cream of tartar, baking soda, and salt, then set aside.

  • In the body of a stand mixer, using the paddle attachment, cream the butter with the sugar for 3 minutes until light and fluffy. This can also be done in a large mixing bowl with a hand mixer.

  • Add the eggs, one at a time, mixing each in fully before adding the next. Then mix in the vanilla extract.

  • Add ⅓ of the flour mixure, and mix to fully incorporate it. Repeat twice, until all of the flour is added. Scrape down the sides as needed.

  • Make the coating by stirring together the cinnamon and sugar in a medium bowl.

  • Portion the cookie dough into 12 even-sized portions to make these large cookies. Roll the dough into smooth balls, then roll each ball into the cinnamon sugar mixture. Place them on the sheet trays, 6 inches apart, they will spread quite a bit, so you will have to bake in batches.

  • Gently press down on the cookie dough balls to flatten them out into large flat circles.

  • Bake each tray of snickerdoodles for 14-15 minutes until lightly golden brown. When done they will be slightly puffed, appear dry in the center of the cookies.

  • Let the snickerdoodles cool completely on the cookie trays before transferring them to a wire rack.

Notes

  • To give your snickerdoodles more cinnamon flavor, add a teaspoon of ground cinnamon to the cookie dough. Crumbl’s recipe doesn’t include cinnamon in the dough, relying on the outer coating to bring all the flavor.
  • To Store: Keep soft snickerdoodle cookies in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
