I love and adore croquettes, i have a special love for them. Because they are so easy to make and it taste so delicious. They even look so cute.

About Potato Croquettes Recipe

A croquette is a breaded and deep-fried dumpling made up of a thick binder and a filling that is served as a side dish, snack, or fast food all over the world.

A thick bechamel or brown sauce, mashed potatoes, wheat flour, or wheat bread are commonly used as binders. A salpicon is a mixture of a binder and a filling that has been combined or pushed into it. Finely chopped meat, seafood, cheese, rice, pasta, mushrooms, and various vegetables, as well as seasonings such herbs and spices, are
common fillings. A pastry cream binder can be used to bind sweet croquettes, which can then be filled with fruit.

The croquette was invented in France, and it was in 1898 that Monsieur Escoffier, the father of classical French cuisine, began writing down the recipe with the help of Monsieur Philias Gilbert. You might use up leftover mashed potatoes by making croquettes.

This is so easy to make, if you have kids around then you can make this for them and they will love it for sure. You can even add a piece of cheese cube in the center of the croquettes and then coat them in the other stuff, this makes them so cheesy and delicious.

Ingredients for potato croquettes

Potatoes:

A cooked potato has very high levels of umami compounds, molecules which stimulate a “pleasant savory taste,” in most plant food sources.

Corn flour :

croquette and other related recipes employ cornflour as a binding agent. Soups, stews, sauces, and other recipes frequently employ it as a thickening. In Italian cooking, corn flour is used for breading. With corn starch, milk, and sugar, a basic pudding can be made.

Bread Crumbs :

To make bread crumbs, grind bread into a coarse or fine powder. It is frequently produced from leftover bread and is a wonderful technique to save waste; the colour is usually pale pink or light brown. The resulting powder is good if produced from toasted or dry bread.

How to Make Potato Croquettes

  • Heat oil in a pan, add in onions, curry leaves, chillies, salt and saute for a min.
  • Now add in all spice powders and toss well.
  • Pour this in mashed potatoes and mix well. Divide it into equal portions.
  • Take small portion, roll it into a cylinder. Do this for all croquettes.
  • Take corn flour in a bowl, add some water and make it into a paste.
  • Take one croquettes, roll it in some all purpose flour, now dip it in cornflour mix and roll it in breadcrumbs.
  • Repeat this for all potatoes. Now put the balls in fridge for 15 mins.
  • Heat oil for deep frying. Drop balls in, and fry till golden.
  • Drain and serve.

Ingredients

  • Oil - 1 tsp + for deep frying
  • Onion - 1 medium size chopped finely
  • Curry leaves a spring chopped finely
  • Green Chillies - 1 chopped finely
  • Ginger Garlic Paste - 1 tsp
  • Chilli powder - 1 tsp
  • Coriander powder - 2 tsp
  • Garam Masala Powder - 1 tsp
  • Salt to taste
  • Potatoes - 2 large boiled peeled and mashed
  • Cornflour / Cornstarch - ¼ cup
  • All Purpose Flour / Maida - ½ cup
  • Bread Crumbs - 2 cup

Instructions

  • Heat oil in a pan, add in onions, curry leaves, chillies, salt and saute for a min.

  • Now add in all spice powders and toss well.

  • Pour this in mashed potatoes and mix well. Divide it into equal portions.

    I want to try this recipe, but whenever I try a recipe with bread crumbs while deep frying process the breadcrumbs are leaving out the balls and spread over the oil... this makes very messy oil with burnt breadcrumbs all over it...
    Pls give a tip on how to avoid this...

    @Breeze Pchilling the croquette for few minutes like 30 mins will help the breadcrumbs to set
