It’s casserole season. There’s still a chill in the air, and a hearty, warm casserole fills our bellies and warms our souls.

My sister and I were just talking about how gratifying it is to take the time to make a casserole. Our world right now is always go go go, and that includes the meals we throw on the table. When we take the time to slowly cook a casserole in the oven, it is always worth it.

Old Fashioned Dinner Recipe

When flipping through my Quailtown Cookbook, I marked this Pork Sausage Casserole Recipe for many reasons. First, my kids love any recipe with pork sausage (also known as breakfast sausage). Second, all the ingredients are pantry and refrigerator staples for me (white rice, chicken broth, celery and onion). Last, this is a simple casserole recipe to make.

I am so glad I found this recipe. My kids literally cheered when I put it on the table. It’s comfort food for them. They love any recipe with pork sausage and white rice. It’s the small things in the life of a Mom, and when nobody complains at the dinner table, all is well in the world.

Rice Casserole with Sausage Ingredient List

  • Pork Sausage (breakfast sausage)
  • Celery, diced
  • Onion, diced
  • Chicken Broth
  • Soy Sauce
  • Salt and Black Pepper
  • White Rice, (do not use instant)

How to Make Sausage and White Rice Casserole

Step By Step Instructions

  1. Brown sausage in a large skillet over medium high heat; draining excess grease.
  2. To the skillet, add diced celery and onion, uncooked rice, soy sauce, salt and pepper and chicken broth; stir.
  3. Pour mixture into a 2 1/2 quart baking dish or casserole dish that has been sprayed with nonstick cooking spray.
  4. Cover tightly with foil; bake in a preheated 350 degree F oven for 30 minutes. Remove foil and cook for an additional 1 hour.
  5. Let casserole sit for 10 minutes. Fluff with a fork before serving.

Storage Instructions

Store leftovers in the fridge for up to a week in an airtight container. Reheat in the microwave.

  • I used pork sausage for this casserole. Pork sausage is also called breakfast sausage.
  • If there’s a bunch of oil in the pan after browning the pork sausage, drain off the excess. Leave approximately 2 tablespoons of oil with the browned meat.
  • Use regular white rice in this sausage casserole. DO NOT use minute rice.
  • Do not precook the rice before adding it with the rest of the ingredients. The rice should be raw.
  • Substitute the 2 cups of chicken broth with 2 cups of water and 2 chicken bouillon cubes if desired.
  • Be sure to cover the casserole tightly with aluminum foil for the first 30 minutes of cooking time.
  • Let the sausage and white rice casserole sit for 10 minutes before serving to let all the remaining liquids absorb completely.
  • Fluff up the rice with a fork or stir well before serving.
  • If you’re short on time, I have cooked this at a higher temperature to speed things up. Cook until the rice is fluffy!

Ingredients

  • 1 pound ground breakfast sausage
  • 1 cup celery, diced
  • 1/2 onion, diced
  • 1 cup white rice (not minute rice)
  • 1 teaspoon soy sauce
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
